How we build a weight-loss recipe

Losing weight comes down to a sustained, moderate calorie deficit — and the reason most people can't sustain one is that they're hungry and bored. Italian home cooking solves both problems better than any "diet" cuisine we know: vegetables are the base of the plate, not a side; legumes and whole grains bring fiber and volume; olive oil, herbs, garlic, lemon and good cheese in small amounts carry the flavor.

Every recipe in this collection meets three rules:

  • Under 550 calories per serving for a main, under 350 for a side or breakfast — with the portion sizes we actually eat.
  • High volume and fiber (at least 6 g per serving) so the plate is filling.
  • At least 20 g of protein in mains, because protein is the macronutrient that best protects muscle and satiety in a deficit.
